Joyce was raised on Banning Lewis Ranch in Colorado Springs and attended St. Mary's High School where she graduated in 1961. She then went on to receive an Associate Degree from Blair Business College in 1964. Joyce met Jim Bittleston in 1968 and they were married November 29, 1968. To this union were born 2 sons. Together they have 8 grandchildren and 3 great-grandchildren. Jim and Joyce moved to Limon in 1976 where she was employed by Evergreen Nursing Home and many restaurants over the years including the Nordica, the Cozy Cafe and Fireside Junction. She moved into retirement in May of 1997. Being a devout Christian she attended Our Lady of Victory Catholic Church and the Oasis of Hope in Limon for many years. Joyce had a love for the outdoors, enjoying camping and fishing, or just sitting under a tree watching the butterflies while reading a good book. She also enjoyed family time in front of the TV, always watching The Price is Right, The Waltons and Little House on the Prairie. Being a night owl she enjoyed watching Star Trek Deep Space 9. Fall was one of her favorite times of the year as she enjoyed watching the leaves on the Aspens change right before swearing at the TV during a Denver Broncos game. She had a passion for baking and made the best homemade bread. Her cheeseburger pie and cinnamon rolls were always a hit, especially around the holidays. Even when she wasn't baking somehow the house always had the scent of fresh baked bread and Love. Services will be held at Love Funeral Home in Limon on Tuesday December 1, 2020 at 11:00am with Pastor Bill Wisner officiating. Any cards or donations can be mailed to P.O.
