Spruce Cafe to open in Longmont

In 1992, David Cohen began baking while living in his friend’s basement on Spruce Street in Boulder. With nothing more than $100 to his name, Cohen began making delicious desserts for coffee shops. This summer he will open a new shop in Longmont.

The new shop is expected to open in mid-June to early July, Cohen said. He is in the process of getting approval from the Health Department. He is also in the process of implementing the cosmetic touches that will make the new space home to the  Spruce Cafe location.

The new shop will be located at 600 S. Airport Rd in the former Que’s Espresso location which permanently closed earlier this year. 

Cohen said the new shop will feature delicious treats made in his Boulder or Longmont kitchens. He hopes to add a small oven to the new shop so pastries can be baked fresh for customers. 

The shop will also include an espresso machine for customers to drop by for coffee, he said. 

Spruce Confections, the bakery behind the cafe, has sold its goods in several Longmont locations including Ziggi’s and Que’s.

When Que’s closed, Cohen’s team began working with the landlord to take over the space. Cohen chose the former coffee shop location because he wanted to move into an area that shared his value for community, he said. He can’t wait to learn more about the Longmont community and to find new ways to serve clients there. 

“We just want to be part of a local neighborhood. That’s what drives us,” Cohen said.
