At the gateway to Longmont’s growing gastronomic scene below the Dickens Opera House at Main Street and Third Avenue, The Passenger restaurant unveiled its offerings to the public through a ceremonious ribbon-cutting ceremony, marking the beginning of its culinary journey.

The owners Vipul and Madhoo Seth are dedicated to connecting people to different cultures and each other, driven by a passion for global cuisine and a meticulously crafted menu that transcends borders, offering an array of dishes from many corners of the world. 

Not content with traditional dining experiences, they introduced the concept of bite-sized tapas, inviting patrons to embark on a culinary adventure with each bite. Their vision has been brought to life through the tireless efforts of their dedicated team and talented chef, resulting in an establishment poised to bring much more to the culinary landscape of Longmont.

Nestled snugly at the juncture of food and camaraderie, The Passenger restaurant welcomed a colorful array of guests on Tuesday: friends, families, local businesses and members of the Longmont Chamber. As the sun neared the horizon, casting a warm glow upon the historic walls, an atmosphere of jubilation enveloped the gathering. 

Gathered at the threshold of culinary adventure, Chamber organizers and esteemed owners, Vipul and Madhoo Seth, alongside the head chef and head mixologist, stood poised to address the eager assembly. With heartfelt gratitude, they extended warm thanks to all who had graced the occasion with their presence. Madhoo Seth, with a gleam of pride in her eyes, expressed the journey that led them to this momentous juncture.

“We opened up Roots here. Last year we moved the restaurant from Lone Tree to here and then we decided to rebrand it this year. It’s our fourth week of rebranding here. We wanted something unique to offer as part of the rebrand and that’s when we came together as a team. We had head chef Mayberry create the new menu and he did an excellent, amazing job. We’re very excited about it,” Madhoo Seth said.

Madhoo Seth’s words resonated with the passion and dedication that had fueled their endeavor. A playful twinkle danced in her eyes as she revealed an innovative offering to those dining at The Passenger.

“We offer a small physical passport. It’s a fun thing we give to people, and we stamp every continent they order here. Once they order from all the continents, when they have traveled the whole world, they get a $35 gift card to commemorate that,” Madhoo Seth said.

The room buzzed with amusement at the prospect of embarking on such a unique culinary escapade. The Seths’ commitment to providing not just a meal, but an experience, underscored a passion for hospitality and global adventure.
